 Why didn't Thor throw his hammer on top of Thanos, and then cut of his head with Stormbreaker?

Good question. Thor would not have been able to cut off Thanos head with Stormbreaker or throw Mjolnir on top of him. Why? Well look at this:

During the Avengers Time Heist, while aboard the Sanctuary II, 2014 Nebula begins interfacing with her 2023 self and her future self’s visual feed is shown to Thanos. He sees footage from the future that he succeeds in his goals and the Snap and sees his death at the hands of Thor. He decides to use this info to achieve his goals quicker. He is prepared for Thor and the others and determined to succeed in his mission.

After attacking the Avengers Facility and destroying it, he is seen sitting in armor while Cap, Thor and Iron Man prepare to face him. Thanos tells them what he is about to do is personal and they engage in battle. He beats Cap and Iron Man and pins down Thor quickly. He nearly killed him with Stormbreaker on his neck until Cap wields Mjolnir and hits him.

Thor was never going to be able to do what he did in Infinity War and the beginning of Endgame. When Thanos saw the footage from the future of Thor with Stormbreaker, he was prepared physically and mentally for the Avengers, you could see it in his prowess in combat as he took on the three of them simultaneously. Thor was an alcoholic and overweight after they returned from the Garden for the next five years. He was in terrible shape to face Thanos who was prepared and pinned him down quickly. Plus as great as having Mjolnir with him in Endgame was, Thanos was barely fazed by it, Cap gave Thanos everything he had with Mjolnir and he still got back up.

During the preparations for the Time Heist, Thor looked like he was sleeping or probably dead. Thor was depressed so he was never going to be able to fight like he did 5 years ago.

 After the Endgame how can you justify each dream sequence shown in age of Ultron? As we saw in Avengers Age of ultron, Scarlet witch mind games with The avengers except Hawkeye. 1.The sequences starts with Tony’s vision. Tony was informing Avengers about Loki’s scepter when wanda cast mind spell on him. After that Tony sees The dead Leviathan coming back to life, crushing the barriers flys into sky. Tony sees all 5 avengers on the floor, half dead and injured. Nat is dead, Thor’s is unconsious, Cap is injured and Shield is broken. Steve asks Tony, “ You could have done more. Why wouldn’t you saved us? ” Tony with a visible tension and fear looks at the sky and sees aliens invading earth. MCU Thor was not knocked out by the weight of a star. He was knocked out by the FULL FORCE of the star, and it took several minutes for that to happen.
